You won't find a more delicious Pumpkin Bread Recipe. This has been a family favorite for years. Sweet and spicy, wonderful served warm and even better on day 2! Recipe adapted from Downeast Maine Pumpkin Bread on Allrecipes.

ingredients:

  • 15 oz pumpkin puree
  • 4 eggs
  • 1 C vegetable oil
  • 2/3 C water
  • 3 C white sugar
  • 3 1/2 C flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger

instructions:

  1. Preheat over to 350 degrees.   Grease two 9 x 5 loaf pans.
  2. Mix together pumpkin, eggs, oil, water and sugar.   Add dry ingredients and stir together with wire wisk until well blended.    Pour into prepared pans.
  3. Bake for 60 minutes.  Insert a toothpick in the center to check doneness.  Bread is ready when the toothpick comes out clean.
  4. One loaf for you, one loaf for a friend!   Enjoy!

I grew up hating chocolate. If my mom was going in to a store with the the promise of bringing us a surprise, all of my siblings would always confirm that she WOULDN’T choose chocolate, because obviously that would be the worst. Whatever. We were weird. But these cookies—I remember my mom making these cookies. Chewy and chocolaty and just so good. These guys started my love affair with chocolate.

Fast forward a few years and I had someone share a recipe with me for homemade oreos. Super yummy, but they used a box cake mix which kind tastes like box cake mix. I remembered this childhood cookie recipe and thought I’d give it a try. The combo is pretty magical.

Homemade Oreos

These start with an awesome Chewy Chocolate cookie that's great on its own. Fill it with a cream cheese frosting and you won't know what hit you! At our house, we like to serve them cold. Bonus--they freeze well!

ingredients:

Chewy Chocolate Cookies
  • 1 C Butter
  • 2 C Sugar
  • 2 Eggs
  • 2 Tsp Vanilla
  • 2 C Flour
  • 3/4 C Cocoa
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
Cream Cheese Frosting
  • 1/2 C Butter (room temp)
  • 8 oz Cream Cheese (room temp)
  • 4 C Sugar
  • 1 tsp. Vanilla

instructions:

Chewy Chocolate Cookies
  1. Cream butter and sugar.  Add eggs and vanilla, blend well.    Combine dry ingredients and blend into creamed mixture.   Drop by spoonfuls onto ungreased cookie sheets.  bake at 350 degrees for 8-9 minutes.  (Don't over bake.   Cookies will be soft and puffy, they will flatten during cooling.)   Move to wire rack and cool completely before filling.
Cream Cheese Frosting
  1. Cream butter and cream cheese, add vanilla.  After well mixed, whip for an additional 2 minutes.   Add powdered sugar and a splash of milk if needed.
Assembly
  1. Once cookies are completely cooled,  put frosting into a 1 gallon ziploc with a large tip snipped off the corner.    Generously pipe frosting onto flat side of one cookie and make sandwiches.    Good for several days in the fridge or freezer.

I do it every year.  I plant zucchini and eat them every way I can think of.  By about mid-July, I'm over them.  This year I only planted 1 plant, but I still have way more than I could ever use.   This bread recipe is our very favorite summertime staple.

This bread is super moist and flavorful. It gets eaten as fast as I can make it. The best part is that it's even easy enough for kids to make.

ingredients:

  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 T cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cup white sugar
  • 3 tsp vanilla
  • 2 cups grated zucchini

instructions:

  1. Grease and flour two 9 x 5 inch loaf pans. Preheat oven to 325 degrees F.
  2. Mix flour, salt, baking powder, soda, and cinnamon together in a bowl
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add dry ingredients and mix well. Stir in zucchini until well combined. Pour batter into prepared pans
  4. Bake for 40 to 60 minutes, or until toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Best served warm with butter

Texas Caviar

This recipe reminds me of summer nights at my sister's house.  She always makes it when we get together, but I'm not sure if she know that I sneak spoonfuls of it.   I mean, it's great with chips, but totally uneccesary.

It's super quick to whip up a big batch of this and I love to use it the next day over a salad or on top of a grilled chicken breast.   Crisp, cold and fresh---it's a favorite around here.

Texas Caviar

This is a summer favorite. Serve with chips, over a salad or with a spoon!

ingredients:

  • 3  Bell Peppers (Any Color--I like to use all different colors)
  • 1/2 Red Onion
  • 1 15.25 oz can Black Beans
  • 1 15.25 oz can Corn
  • 1 2.25 oz can Sliced Black Olives 
Dressing Ingredients
  • 1/2 Cup Apple Cider Vinegar
  • 1/4 Cup Vegetable Oil
  • 1 1/2 tsp White Sugar
  • 1 1/2 tsp Salt
  • Dash Pepper

instructions

Finely chop all the vegetables and put them in a bowl. Set aside. In a glass measuring cup, mix together the dressing ingredients and mix them into the vegetables. Serve immediately or store covered in refrigerator. Serve with tortilla chips.
