This recipe reminds me of summer nights at my sister's house. She always makes it when we get together, but I'm not sure if she know that I sneak spoonfuls of it. I mean, it's great with chips, but totally uneccesary.
It's super quick to whip up a big batch of this and I love to use it the next day over a salad or on top of a grilled chicken breast. Crisp, cold and fresh---it's a favorite around here.
